I love Valentine’s Day. Not for the sappy lovey dovey parts of it, but for the food aspect! Believe me, I’ll l totally watch the Hallmark movies that are on in February, but I just love that it’s an excuse to go out to a nice dinner, make fun treats, & appreciate the ones I love!
A little story about how this idea unfolded…I was walking through the mall a couple days before Christmas & my sister & I came across one of those little kiosks selling random things. They were giving out samples of their locally made granola truffles. So I of course had to try it, because free food! The truffles were super yummy, but literally just some chewy granola with dried fruit in it dipped in chocolate.
That’s when the creative side in me said, “I could totally make my own version of these.” And that’s what I did! One of my favorite parts of having this blog is that whenever I come across a food item I really love that’s store-bought, I can experiment & create my own version to share with all of you!

These truffles are a fun twist on those delicious boxes of chocolate we’re going to be receiving soon! The granola center adds a great texture, there’s no added sugars (except for the chocolatey coating), & they’re so easy to make. Plus, the flavor I chose to make is the perfect Valentine’s Day homage – chocolate covered strawberry!
They could easily be made gluten-free with certified GF oats and chocolate. Plus, you could make your own delicious flavors by swapping out the fruit used. I also love that you only need a blender to make these. The less steps and ingredients, the better in my book! I’m all about quick, tasty recipes.

These truffles are fancy enough for a dessert, yet substantial enough to eat as a snack or for pre-workout fuel. I love a snack with versatility like that! Granola Truffles
Ingredients:
- 1 cup pitted dates (soaked in water for 15 minutes)
- ¼ cup water
- 1 cup fresh or frozen strawberries
- 1 ½ cups rolled oats
- ¼ cup ground flaxseed
- 1 tablespoon coconut oil, melted
- ¼ cup unsweetened coconut flakes
- 1 tsp vanilla
- ½ cup semi-sweet chocolate chips, melted with 1 tsp coconut oil
Directions:
- Place dates, water, and strawberries in blender & blend until smooth (or to your preferred texture).
- Add oats, flaxseed, coconut oil, coconut, and vanilla to a mixing bowl. Pour strawberry puree into bowl. Mix until well combined and the oat mixture is evenly coated.
- Refrigerate mixture for 30 minutes.
- Using a cookie scoop, form mixture into 1-inch balls. Roll into balls.
- Place chocolate chips and coconut oil in a small bowl and microwave in 30 second bursts until smooth. Drizzle chocolate over granola balls. Garnish with crushed, freeze dried strawberries.
- Store in refrigerator up to 1 week.
Makes about 18-20 truffles
