Chocolate and strawberry flavors combine to create this perfectly crunchy granola reminiscent of the sweet Valentine’s Day tradition.
Now that January is over (which seemed like the longest month ever!), it’s time for Valentine’s sweet treats! The main reason I love Valentine’s Day is for an excuse to bake goodies! My love language is definitely baking for others and enjoying meals together. It lights me up to be able to give the people I love a freshly baked, homemade sweet treat.
I’m not really sure what we’re going to do for Valentine’s Day this year. We usually keep it pretty low key. Since V-Day is on a Wednesday this year, we’ll probably just go out to a nice dinner on the weekend. I’m a total homebody on weekdays and just love wearing comfy clothes and having quiet nights after work most days.

I’ve been wanting to make a granola for some time now. I rarely eat yogurt without some type of granola on top. And I also love a bowl of granola with milk. I forget how simple making your own granola is sometimes. It can be made with things you already have in your pantry and is so versatile. The flavor possibilities are endless! It seriously takes no time to whip up and tastes SO GOOD! You can add your favorites mix-ins and leave out what you don’t like, which the best perk of making your own over buying it at the store! Plus, I often feel like granola at the grocery store is a little pricey and can sometimes have preservatives or a lot of sugar added to it.
I’m not really the best at meal prepping on the weekends besides snacks and desserts (priorities, am I right?!). So making homemade granola counts as meal prep to me. You can make a batch of it on Sunday and have breakfasts and snacks ready to go in a flash throughout the week. I also love the fact that granola can make a super easy and tasty gift. Throw some in a mason jar and you’ve got a present ready to go.
It wouldn’t be Valentine’s Day without chocolate and strawberries. So it was a no brainer when deciding the flavor of this granola. It’s just chocolatey enough without being over the top and the crunchy strawberries add a perfect sweetness and extra crunch to the mix. This granola is definitely going to be a favorite even after V-Day comes and goes!
Chocolate Covered Strawberry Granola
Ingredients:
- 3 cups rolled oats
- ¾ cup pecans, broken into pieces
- 3 Tbsp cocoa powder
- ¼ tsp salt
- ¼ cup maple syrup
- 3 Tbsp coconut oil, melted
- 3 Tbsp semi-sweet chocolate chips
- ½ cup freeze dried strawberries
Directions:
- Preheat oven to 325 degrees.
- In a large bowl combine oats, pecans, cocoa powder, and salt. Stir to combine.
- Add in maple syrup and melted coconut oil. Stir to combine until the mixture is evenly coated.
- Spread oat mixture onto a baking sheet lined with parchment paper. Bake for 25-30 minutes, stirring halfway.
- After taking granola out of oven, sprinkle chocolate chips on top. When melted, stir granola. Once completely cooled, add strawberries.
- Store in an airtight container.
